JALISCO
officially Free and Sovereign State of Jalisco (Spanish: Estado Libre y Soberano de Jalisco)
Jalisco is one of the 31 states (32 federal entities including one “federal district”) in west- central Mexico. Its capital and largest city is Guadalajara which is the second biggest metropolitan area in Mexico.
Jalisco has the third highest economy in Mexico and is valued for its national resources and history. Guadalajara is seen as the center of Mexican culture and considered by most to be the home of mariachi music. Many other aspects of Mexican culture are said to have originated from Jalisco such as ranchera music, tequila, jaripeo and our original Birria recipe!
A LEGACY OF AUTHENTIC FLAVOR
DON BONIFACIO GONZALEZ
Don Bonifacio Gonzalez grew up in Guadalajara Jalisco, where the authentic Birria originated from. He moved to the states in the 1930s to make his dream of starting his own Birrieria a reality.
The secret family recipe that everybody loved has stayed in his family for over 100 years and was passed down to him when he was little from his uncle. In 1972, he finally opened his first restaurant Birrieria Jalisco in Boyle Heights, California to share this amazing dish to the people in California.
Don Bonifacio Gonzalez’s favorite saying was “Me Dicen el Sabroso” and he dedicated his life to share his love for authentic Birria and to improve the Birrieria experience to the local community. The Birrieria was a success and to this day the authentic delicacy is loved and enjoyed by customers who come and visit.
After Don Bonifacio Gonzalez passed away in year 2000, his authentic taste of Birria has been passed down to the new Birrieria De Don Boni. We continue to share the passion of Don’s excellence in customer service and friendly atmosphere to make every meal memorable, and get a taste of Jalisco.

he birria and consommé are so tasty. My taste buds kept saying “more more” after the first bite… and even after I was stuffed haha. This is one of the rare places that uses goat birria instead of beef. I love the traditional goat version and this place delivers

I have been coming to this birria for years! By far one of my favorite places, the food is delicious and the service is really good! My only suggestion is coming early because it gets busy really quick on the weekend.

“Talk about a good traditional Mexican dish!!! Birria!!. I have been coming to this place since the early 90s. Previously it used to be called “Birrieria Jalisco” now its Birrieria De Don Boni. It is a family owned business with an autentic Jalisco birria recepie. I highly recomend this location. You will love it!! The only teo items served are Birria and quesadillas. The servers are nice and attentive. Dont miss out on your trip to East Los. Oh by the way, Birria is goat meat!!!”

“My friend wanted to introduce me to the best birria in town and he took me here. It was delicious! We shared a large platter and added an extra order of tortillas. The meat was so tender and the broth was just incredibly rich and flavorful. Great service, outstanding birria, and reasonable prices. Plus we got a discount with our Yelp check-in! I look forward to returning.”

“Birria = goat stew. If you are ok with that, then you are in for a treat. This place has been a staple in Boyle Heights for decades. Formerly known as Birrieria Jalisco. My understanding is that the family named it after their father Don Boni. Real simple menu. I personally like to add lots of lime, cilantro, special hot sauce and onions on my birria plus they give you fresh handmade tortillas. Very fast service. Expect large morning crowds on the weekends. Plenty of parking in the back alley entrance.”
